If I had the time, I would bake one every day just for that reason 🙂 I know we haven’t officially started the Apple Crisp season (fall) yet, BUT listen to me, friend. What if we combine a summer fruit with apples and eat it right away?! I know, it sounds a little crazy. Have you ever thought about combining blueberries and apples? It’s truly the most delicious surprise. Two fruits in one crisp really help intensify the flavor. And that BEAUTIFUL blue color from the blueberries! I can’t get enough of it. This recipe combines tart apples with sweet blueberries and an irresistible oat topping that adds just the right amount of sticky, crispy sweetness. When it’s crispy and bubbly (and fills your kitchen with the best aroma), serve it warm with vanilla ice cream (is there any other way to eat it?!) and enjoy. Bring this crisp to your 4th of July party, your next summer potluck, or Labor Day party and it will definitely be a hit. Or, if you’re like me, you can just make it for yourself (and of course, for your family ;)) and enjoy it as a dessert … and why not for breakfast too. I really like to serve Fruit Crisp over a bowl of plain Greek yogurt for breakfast. DELICIOUS. Ingredients You’ll Need Notes on Ingredients: Blueberries: I use fresh, but frozen would also work. Apples: I find that the best apples for baking are Golden Delicious, Honeycrisp, Jonagold, McIntosh, and Fuji. These varieties generally hold up well to baking temperatures. Make sure to cut them into small pieces to cook through properly. Sugar: adds extra sweetness to the fruit mixture. Cornstarch: used for thickening the fruit mixture. Lemon Juice: prevents the apples from browning and helps balance the sweetness. Vanilla: for sweetness and a flavor boost. Cinnamon: adds a warm, cozy flavor. One of the key spices for baking! Oats: If you want to make this recipe gluten-free, be sure to use certified gluten-free oats. Oats provide the best consistency, so I recommend choosing old-fashioned or instant oats instead of coarse rolled oats. Flour: I use all-purpose flour, but you can substitute it with any other type, such as 1:1 gluten-free all-purpose flour, white whole wheat flour, etc. Brown Sugar: gives the oat topping a rich, soft, slightly caramel flavor. Salt: flavor enhancer! Butter: mixes all the topping ingredients until a crumbly consistency is achieved. The Nutritional Scoop: Blueberries are a good source of fiber, vitamin C, vitamin K, manganese, and potassium. They contain a high content of antioxidants, especially anthocyanins, which support the immune system and cell function. Blueberries have also been found to improve heart health by lowering total cholesterol levels, LDL cholesterol levels, and blood pressure. Additionally, they may play a role in perception and brain function. Apples contain soluble fiber, potassium, vitamin C, and antioxidants and may protect against type II diabetes by helping with blood sugar control. Equipment Needed (affiliate links – I receive a small commission on purchase) Mixing bowl Baking dish How to Make Blueberry Apple Crisp Prepare baking dish. Preheat the oven to 350 degrees and grease a 9×9 or 11×7 baking dish. Combine the fruit mixture. In a large mixing bowl, combine blueberries, apples, sugar, cornstarch, lemon juice, vanilla, and cinnamon and mix well. Make an oat topping. In a medium mixing bowl, mix oats, flour, brown sugar, and salt. Drizzle melted butter over the oat mixture and mix well. Transfer to the baking dish. Pour the fruit mixture into the baking dish and spread the oat topping evenly over it, leaving large clumps intact. Bake! Bake until the fruit juices bubble and the topping is golden brown and firm (about 45–55 minutes). Expert Tips (that’s me!) The best apple varieties for crisps hold up well and retain their structure even in heat. Some of my favorites for baking are: Golden Delicious, Honeycrisp, Jonagold, McIntosh, and Fuji. Double the topping recipe and store half in the freezer for up to three months for the next crisp you make! Serve warm with vanilla ice cream, whipped cream, or crème fraîche. OR serve it over a bowl of yogurt in the morning for a delicious breakfast! Melting the butter for the oat topping is much easier than trying to cut cold butter into the oat mixture. Storage and Reheating Leftovers can be stored at room temperature for up to 24 hours and in an airtight container in the refrigerator for 4-5 days. To reheat, place it in the oven at 175°C for about 20 minutes or microwave for about 30 seconds. Make a double batch of crispy topping and store it in an airtight container or bag in the freezer for up to three months! You can also freeze crisps! Store in an airtight container for up to three months. Thaw overnight in the refrigerator and reheat in the oven or microwave.
